          Abstract

          Este trabalho foi conduzido com o objetivo de estudar os aspectos qualitativos da carcaça e da carne de machos Braford (5/8 Hereford 3/8 Nelore) desmamados em duas idades, aos 72 (T72) ou 210 (T210) dias. Utilizaram-se 36 bezerros, não castrados, os quais foram terminados em confinamento e abatidos aos quatorze meses de idade. Não houve diferença significativa para as porcentagens de músculo, gordura e osso, sendo que as médias entre os dois tratamentos para essas características foram de 63,29; 21,97; e 15,03%, respectivamente. O T72 apresentou maior relação músculo/osso (4,49 contra 4,02) que o T210, não existindo diferença entre os dois tratamentos para relação músculo + gordura/osso. A cor, textura e marmoreio da carne foram semelhantes entre os dois tratamentos, sendo os valores observados no T72 de 4,19; 3,31; e 5,75 pontos, respectivamente, e no T210 de 3,89; 3,63; e 5,63 pontos, citados na mesma ordem. A maciez da carne foi classificada como levemente acima da média nos dois tratamentos e a força de cizalhamento foi de 7,36 e 7,17 kg, respectivamente, para T72 e T210. Os animais do T72 apresentaram 6,32 e 5,97 pontos, respectivamente, para palatabilidade e suculência da carne; nos animais do T210, esses valores foram de 6,41 e 6,08 pontos. A quebra ao descongelamento da carne foi 4,84% e a quebra à cocção, de 28,97%, no T72, enquanto no T210 estes valores foram de 7,01 e 26,76%, citados na mesma ordem. Machos Braford desmamados aos 72 ou 210 dias de idade e abatidos aos quatorze meses de idade apresentaram carne com características sensoriais semelhantes, indicando que os dois manejos são adequados para a produção de machos superprecoces.

          Translated abstract

          The experiment was conducted with the objective to study carcass and meat characteristics of Braford (5/8 Hereford + 3/8 Nellore) males, weaned at two ages, 72 (T72) or 210 (T210) days. Thirty-six non castrated males were feedlot finished and slaughtered with fourteen months of age. No significant difference was observed for muscle, fat and bone percentages, being the means across the two treatments of 63.29; 21.97; and 15.03%, respectively. The T72 males showed higher muscle/bone ratio than the T210 (4.49 vs 4.02), no difference between treatments was observed for muscle + fat/bone ratio. Meat color, texture and marbling were similar between the two treatments, being the average values 4.19; 3.31; and 5.75 points, respectively, for the T72 and 3.89; 3.63; and 5.63 points, respectively, for the T210. Meat tenderness was classified as slightly above average for both treatments and the Shear values were 7.36 and 7.17 kg, respectively, for the T72 and T210. T72 animals showed 6.32 and 5.97 points, respectively, for meat palatability and juiciness, for T210 animals these values were 6.41 and 6.08 points. Meat thawing losses and cooking losses were, respectively, 4.84 and 28.97%, for the T72 and 7.01 and 26.76%, respectively, for T210. Braford males weaned at 72 or 210 days and slaughtered at fourteen months of age, display meat with similar sensorial characteristics, indicating that both managements are adequate for young males meat production.

              Effect of castration on myofibrillar protein turnover, endogenous proteinase activities, and muscle growth in bovine skeletal muscle.

              The effect of castration on endogenous proteinase activity and myofibrillar protein turnover was investigated in cattle. Six each of MARC III composite bulls and steers weighing approximately 210 kg were given ad libitum access to a typical growing diet. At 0, 42, 84, 126, and 168 d, two consecutive 24-h urine samples were obtained. Urine was analyzed for N tau-methylhistidine (N tau MH) and creatinine. Following slaughter after 170 d on feed, a longissimus muscle sample was removed immediately from each carcass for quantification of mu-calpain, m-calpain, calpastatin, cystatin(s), cathepsin B, and cathepsin B + L activities. Bulls were heavier (P .05) in calpain or cathepsin activities were observed between bulls and steers. However, muscle from bulls had greater (P < .05) activities of calpastatin and cystatin(s) than that from steers. A negative relationship existed between d-168 FDR and calpastatin (r = -.72; P < .05) and cystatin (r = -.62; P < .05) activities. These results indicate that decreased FDR of skeletal muscle from growing bulls contributes to their greater efficiency of growth and could be related partially to cystatin-mediated cathepsin activity and(or) calpastatin-mediated calpain activity.
