Abstract

En todas las culturas, las comidas festivas manifiestan la historia de la comunidad; así, en México se puede encontrar la identidad nacional ligada a los alimentos que se consumen en esas fechas especiales. El sistema semiótico culinario que analizamos se constituye por el conjunto de textos identificados como parte de la cultura mexicana. Partimos del modelo de la semiótica de la cultura con los planteamientos de Iury Lotman. Nos interesa presentar la semiosfera festiva culinaria de México para comprobar cómo a través de los textos culinarios se manifiesta la memoria de una cultura que se identifica por sus gustos culinarios.

Translated abstract

Festive meals represents, in all cultures, the history of the community. In Mexico, we can see how the national identity is linked to certain foods that are consumed during special celebrations. The culinary semiotic system that we analyze in this paper is constituted by the collection of texts identified as part and parcel of the Mexican culture. We begin our model of cultural semiotics based on the writings of Iury Lotman. We wish to present the Mexican festive culinary semio-sphere as proof of how through the analysis of culinary texts the memory of a culture can be manifested and identified.
