      Crickets Are Not a Free Lunch: Protein Capture from Scalable Organic Side-Streams via High-Density Populations of Acheta domesticus

          Abstract

          It has been suggested that the ecological impact of crickets as a source of dietary protein is less than conventional forms of livestock due to their comparatively efficient feed conversion and ability to consume organic side-streams. This study measured the biomass output and feed conversion ratios of house crickets ( Acheta domesticus) reared on diets that varied in quality, ranging from grain-based to highly cellulosic diets. The measurements were made at a much greater population scale and density than any previously reported in the scientific literature. The biomass accumulation was strongly influenced by the quality of the diet (p<0.001), with the nitrogen (N) content, the ratio of N to acid detergent fiber (ADF) content, and the crude fat (CF) content ( y=N/ADF+CF) explaining most of the variability between feed treatments (p = 0.02; R2 = 0.96). In addition, for populations of crickets that were able to survive to a harvestable size, the feed conversion ratios measured were higher (less efficient) than those reported from studies conducted at smaller scales and lower population densities. Compared to the industrial-scale production of chickens, crickets fed a poultry feed diet showed little improvement in protein conversion efficiency, a key metric in determining the ecological footprint of grain-based livestock protein. Crickets fed the solid filtrate from food waste processed at an industrial scale via enzymatic digestion were able to reach a harvestable size and achieve feed and protein efficiencies similar to that of chickens. However, crickets fed minimally-processed, municipal-scale food waste and diets composed largely of straw experienced >99% mortality without reaching a harvestable size. Therefore, the potential for A. domesticus to sustainably supplement the global protein supply, beyond what is currently produced via grain-fed chickens, will depend on capturing regionally scalable organic side-streams of relatively high-quality that are not currently being used for livestock production.

          An Exploration on Greenhouse Gas and Ammonia Production by Insect Species Suitable for Animal or Human Consumption

          Background Greenhouse gas (GHG) production, as a cause of climate change, is considered as one of the biggest problems society is currently facing. The livestock sector is one of the large contributors of anthropogenic GHG emissions. Also, large amounts of ammonia (NH3), leading to soil nitrification and acidification, are produced by livestock. Therefore other sources of animal protein, like edible insects, are currently being considered. Methodology/Principal Findings An experiment was conducted to quantify production of carbon dioxide (CO2) and average daily gain (ADG) as a measure of feed conversion efficiency, and to quantify the production of the greenhouse gases methane (CH4) and nitrous oxide (N2O) as well as NH3 by five insect species of which the first three are considered edible: Tenebrio molitor, Acheta domesticus, Locusta migratoria, Pachnoda marginata, and Blaptica dubia. Large differences were found among the species regarding their production of CO2 and GHGs. The insects in this study had a higher relative growth rate and emitted comparable or lower amounts of GHG than described in literature for pigs and much lower amounts of GHG than cattle. The same was true for CO2 production per kg of metabolic weight and per kg of mass gain. Furthermore, also the production of NH3 by insects was lower than for conventional livestock. Conclusions/Significance This study therefore indicates that insects could serve as a more environmentally friendly alternative for the production of animal protein with respect to GHG and NH3 emissions. The results of this study can be used as basic information to compare the production of insects with conventional livestock by means of a life cycle analysis.

            Characterization of food waste as feedstock for anaerobic digestion.

            Food waste collected in the City of San Francisco, California, was characterized for its potential for use as a feedstock for anaerobic digestion processes. The daily and weekly variations of food waste composition over a two-month period were measured. The anaerobic digestibility and biogas and methane yields of the food waste were evaluated using batch anaerobic digestion tests performed at 50 degrees C. The daily average moisture content (MC) and the ratio of volatile solids to total solids (VS/TS) determined from a week-long sampling were 70% and 83%, respectively, while the weekly average MC and VS/TS were 74% and 87%, respectively. The nutrient content analysis showed that the food waste contained well balanced nutrients for anaerobic microorganisms. The methane yield was determined to be 348 and 435 mL/gVS, respectively, after 10 and 28 days of digestion. The average methane content of biogas was 73%. The average VS destruction was 81% at the end of the 28-day digestion test. The results of this study indicate that the food waste is a highly desirable substrate for anaerobic digesters with regards to its high biodegradability and methane yield.

              Forecasting potential global environmental costs of livestock production 2000-2050.

              Food systems--in particular, livestock production--are key drivers of environmental change. Here, we compare the contributions of the global livestock sector in 2000 with estimated contributions of this sector in 2050 to three important environmental concerns: climate change, reactive nitrogen mobilization, and appropriation of plant biomass at planetary scales. Because environmental sustainability ultimately requires that human activities as a whole respect critical thresholds in each of these domains, we quantify the extent to which current and future livestock production contributes to published estimates of sustainability thresholds at projected production levels and under several alternative endpoint scenarios intended to illustrate the potential range of impacts associated with dietary choice. We suggest that, by 2050, the livestock sector alone may either occupy the majority of, or significantly overshoot, recently published estimates of humanity's "safe operating space" in each of these domains. In light of the magnitude of estimated impacts relative to these proposed (albeit uncertain) sustainability boundary conditions, we suggest that reining in growth of this sector should be prioritized in environmental governance.
