          Abstract

          RESUMEN Hacia fines del siglo XIX se registró un aumento en el reconocimiento del fraude alimentario, que coincidió con el desarrollo agroindustrial y con un mayor control sanitario de los espacios urbanos a través de nuevas políticas de higiene. Este artículo introduce al estudio de la conformación de la estructura científica que se organizó para controlar dicho fraude. A través de fuentes institucionales, legales y judiciales explora el primer decenio de funcionamiento del Instituto de Higiene y el gradual surgimiento de una estructura fiscalizadora municipal asentada en el laboratorio, en los inspectores y en los químicos, que complementó la labor inicial del Instituto, principalmente en provincia. Esta estructura posicionó al laboratorio como primer espacio de fiscalización de los alimentos y como instancia de certificación del fraude en tribunales.

          ABSTRACT By the end of the nineteenth century the rise of food fraud overlapped with agro-industrial development and with a greater sanitary control of urban spaces trough new hygiene policies. This article presents the conformation of food fraud and the scientific structure organized for its management. It explores through governmental, legal and judicial sources, the first decade of the Institute of Hygiene and the arrival of a municipal mechanism of inspection based on the laboratory, inspectors, and chemists, which complemented the initial work of the Institute, especially in the provinces. This mechanism positioned the laboratory both, as a prior space of food inspection, and as a relevant instance of certification of food fraud in court.

          Complexity of the International Agro-Food Trade Network and Its Impact on Food Safety

          With the world’s population now in excess of 7 billion, it is vital to ensure the chemical and microbiological safety of our food, while maintaining the sustainability of its production, distribution and trade. Using UN databases, here we show that the international agro-food trade network (IFTN), with nodes and edges representing countries and import-export fluxes, respectively, has evolved into a highly heterogeneous, complex supply-chain network. Seven countries form the core of the IFTN, with high values of betweenness centrality and each trading with over 77% of all the countries in the world. Graph theoretical analysis and a dynamic food flux model show that the IFTN provides a vehicle suitable for the fast distribution of potential contaminants but unsuitable for tracing their origin. In particular, we show that high values of node betweenness and vulnerability correlate well with recorded large food poisoning outbreaks.

            VINOS EN CHILE DESDE LA INDEPENDENCIA HASTA EL FIN DE LA BELLE ÉPOQUE

            La producción, importación y consumo de vinos experimentaron cambios significativos en el período que va entre la Independencia y la víspera de la Primera Guerra Mundial. En este trabajo se estudia la introducción de nuevas cepas y los cambios en las técnicas de vinificación desde mediados del siglo XIX. El desglose de las cifras de producción anual por provincia permite apreciar la difusión de las nuevas cepas, mientras que testimonios contemporáneos advierten sobre las diferencias en las calidades del producto. Las cifras de importación para los distintos tipos y envases de vinos reflejan estos cambios. La internación de tintos a granel experimenta una caída sistemática desde la década del 1870, no así el champaña que aún no se fabricaba en Chile. Más significativa es la creciente figuración de los vinos nacionales en los menús de los banquetes oficiales y sociales en el período
