          Abstract

          RESUMEN: La nanotecnología presenta un increíble potencial de aplicación en el sector alimentario a lo largo de la cadena alimentaria priorizando los requerimientos del consumidor. Tiene la capacidad de proveer nuevas formas de control y estructurado de alimentos con mayor funcionalidad y valor. En este trabajo se explican brevemente los principales conceptos de la nanotecnología y la relevancia que tiene la reducción de tamaño en sus propiedades. Se describen los principales nanobjetos de uso potencial en alimentos y se ofrece una visión global de diferentes estudios llevados a cabo y sus aplicaciones en la industria alimentaria.

          ABSTRACT: Nanotechnology presents an incredible potential for application in the food sector along the food chain prioritizing consumer requirements. It has the capacity to provide new forms of control and structured food with greater functionality and value. This paper briefly explains the main concepts of nanotechnology and the importance of reducing size in their properties. The main nano-objects of potential use in foods are described and a global view of different studies carried out and their applications in the food industry is offered.

            Nanostructures: Current uses and future applications in food science

            Recent developments in nanoscience and nanotechnology intend novel and innovative applications in the food sector, which is rather recent compared with their use in biomedical and pharmaceutical applications. Nanostructured materials are having applications in various sectors of the food science comprising nanosensors, new packaging materials, and encapsulated food components. Nanostructured systems in food include polymeric nanoparticles, liposomes, nanoemulsions, and microemulsions. These materials enhance solubility, improve bioavailability, facilitate controlled release, and protect bioactive components during manufacture and storage. This review highlights the applications of nanostructured materials for their antimicrobial activity and possible mechanism of action against bacteria, including reactive oxygen species, membrane damage, and release of metal ions. In addition, an overview of nanostructured materials, and their current applications and future perspectives in food science are also presented.

              Nano-food packaging: an overview of market, migration research, and safety regulations.

              Recently, food packages produced with nanoparticles, "nano-food packaging," have become more available in the current market. However, although the use of nanomaterials is increasing in food packaging applications, concern over toxicity affects consumer perceptions and acceptance. Quite a number of commercialized forms of nano-food packaging are coated or composited product with inorganic materials, for example, nanosilver and nanoclay as representative examples. Several studies have shown the possibility of nanomaterial migration from packaging or containers to foodstuff. The debate is still ongoing among researchers about the extent of migration and whether it is negligible and safe. Government agencies and stakeholders must hurry to determine use limitations and release conclusive legislation and regulations as soon as possible since nano-food packaging may have great impacts on human health. This paper aims to review the availability of nano-food packaging in the current market, report case studies on nanomaterial migration, and present the current status of safety regulations and management of nano-food packaging in leading countries across regions. This review should enable governments and researchers to develop further nanomaterial risk assessment studies.
