          Abstract

          El análisis comparativo de la evolución del gasto en alimentos en una muestra representativa del Gran Santiago contenida en la IV y V Encuesta de Presupuestos Familiares (1987- 1988 y 1996-1997), permite apreciar el aumento en el gasto en alimentos en el período y los cambios en los patrones alimentarios de los hogares del Gran Santiago, que se reflejan en las modificaciones en la estructura del gasto en alimentos, que evoluciona hacia alimentos de orígen animal y procesados ricos en grasas saturadas y azúcares con una gran importancia en la proporción del gasto destinado a Comidas y Bebidas Fuera del Hogar, Comidas Preparadas para Llevar al Hogar, Bebidas y Jugos, Productos Cárneos, Pastelería, Helados y Chocolates con una disminución de la importancia en la proporción del gasto en pan, cereales, féculas, verduras, frutas, legumbres y productos del mar. El incremento del gasto en alimentos, se refleja también en el aumento en el consumo aparente de nutrientes, destacando la variación experimentada en grasas, indicando que este patrón de consumo no ha sido el más adecuado para mejorar la calidad alimentaria de la población

          Translated abstract

          The comparative analysis of the food expenditure in a representative sample in Gran Santiago included in the IV and V Household Survey of Budget Expenses (1987-1988 and 1996-1997, respectively) shows an increase in food expenses in that period and changes in the food patterns for households in Gran Santiago, which are reflected in modifications in the structure of food expenses. These modifications include an increased consumption of food based on animal sources and processed products rich in saturated fat and sugars with a high increase of family expenses in out-of-home meals and beverages, home-delivered meals, softdrinks and juices, meat, pastry, ice cream and chocolates. A decrease in bread, cereals, starch, vegetables, fruits, legumes and seafood consumption is observed. An increase in food expenses is also reflected in a high apparent consumption of nutrients, highlighting fat variation, and demostrating that this food pattern has not improved the quality of food consumed in the population.

          Epidemiological transition in Latin America: the case of Chile.

          To describe Chile's stage of epidemiological transition, a descriptive study of the changes to the demographic and economic profile of this country during the last 20 years is presented. The decline in the total fertility rate from 3.4 in 1970 to 2.6 in 1992 and the important decrease in general and infant mortality rate has led to an increase of life expectancy of 8 years for men and 9 years for women. This has resulted in changes to the age structure and causes of mortality and morbidity of the population. A reduction of 82% in the proportion of deaths among children < 1 year and a 73% increase of mortality amongst those 65 years and older can be observed. In line with these changes non-communicable diseases have increased from 53.7% of all deaths in 1970 to 74.9% in 1991. In the same period mortality rates from cardiovascular causes have decreased from 189.6 to 161.1 per 100,000 population, whilst their relative proportion of all causes has increased from 22.3% to 29%. High prevalence of risk factors should lead to a significant increase of chronic diseases in future years. Regarding morbidity, a high incidence rate for tuberculosis persists together with an increase of infections of the digestive system and of sexually transmitted diseases. A decrease in the rates of diseases preventable by immunisation has been noted. It is concluded that, as defined by population mortality statistics, Chile is in a post-transition stage but with a persistence of some infectious diseases corresponding to a transitional stage of development.

            Nutrition transition in Latin America: the case of Chile.

            The nutritional situation of Latin America is changing rapidly from one characterized by underweight and stunting to one where chronic diseases such as cancer, cardiovascular disease, and type 2 diabetes are increasingly prevalent. In Chile, under-nutrition has virtually disappeared, but rising obesity rates and risk factors for chronic diseases indicate the need to modify existing programs and emphasize prevention of diet-related chronic diseases.
