      Experimental Barley Flour Production in 12,500-Year-Old Rock-Cut Mortars in Southwestern Asia

          Abstract

          Experimental archaeology at a Natufian site in the Southern Levant documents for the first time the use of 12,500-year-old rock-cut mortars for producing wild barley flour, some 2,000 to 3,000 years before cereal cultivation. Our reconstruction involved processing wild barley on the prehistoric threshing floor, followed by use of the conical mortars (a common feature in Natufian sites), thereby demonstrating the efficient peeling and milling of hulled grains. This discovery complements nearly 80 years of investigations suggesting that the Natufians regularly harvested almost-ripe wild cereals using sickles hafted with flint blades. Sickles had been replicated in the past and tested in the field for harvesting cereals, thusly obtaining the characteristic sheen along the edge of the hafted flint blades as found in Natufian remnants. Here we report that Natufian wide and narrow conical mortars enabled the processing of wild barley for making the groats and fine flour that provided considerable quantities of nourishment. Dishes in the Early Natufian (15,000–13,500 CalBP) were groat meals and porridge and subsequently, in the Late Natufian (13,500–11,700 CalBP), we suggest that unleavened bread made from fine flour was added. These food preparing techniques widened the dietary breadth of the sedentary Natufian hunter-gatherers, paving the way to the emergence of farming communities, the hallmark of the Neolithic Revolution.

          Distribution of wild wheats and barley.

          If we accept the evidence at face value, we are led to conclude that emmer was probably domesticated in the upper Jordan watershed and that einkorn was domesticated in southeast Turkey. Barley could have been domesticated almost anywhere within the arc bordering the fertile crescent. All three cereals may well have been harvested in the wild state throughout their regions of adaptation long before actual farming began. The primary habitats for barley, however, are not the same as those for the wheats. Wild barley is more xerophytic and extends farther downslope and into the steppes and deserts along the wadis. It seems likely that, while all three early cereals were domesticated within an are flanking the fertile crescent, each was domesticated in a different subregion of the zone. Lest anyone should be led to think the problem is solved, we wish to close with a caveat. Domestication may not have taken place where the wild cereals were most abundant. Why should anyone cultivate a cereal where natural stands are as dense as a cultivated field? If wild cereal grasses can be harvested in unlimited quantities, why should anyone bother to till the soil and plant the seed? We suspect that we shall find, when the full story is unfolded, that here and there harvesting of wild cereals lingered on long after some people had learned to farm, and that farming itself may have orig inated in areas adjacent to, rather than in, the regions of greatest abundance of wild cereals. We need far more specific information on the climate during incipient domestication and many more carefully conducted excavations of sites in the appropriate time range. The problem is far from solved, but some knowledge of the present distribution of the wild forms should be helpful.

            Processing of wild cereal grains in the Upper Palaeolithic revealed by starch grain analysis.

            Barley (Hordeum vulgare L.) and wheat (Triticum monococcum L. and Triticum turgidum L.) were among the principal 'founder crops' of southwest Asian agriculture. Two issues that were central to the cultural transition from foraging to food production are poorly understood. They are the dates at which human groups began to routinely exploit wild varieties of wheat and barley, and when foragers first utilized technologies to pound and grind the hard, fibrous seeds of these and other plants to turn them into easily digestible foodstuffs. Here we report the earliest direct evidence for human processing of grass seeds, including barley and possibly wheat, in the form of starch grains recovered from a ground stone artefact from the Upper Palaeolithic site of Ohalo II in Israel. Associated evidence for an oven-like hearth was also found at this site, suggesting that dough made from grain flour was baked. Our data indicate that routine processing of a selected group of wild cereals, combined with effective methods of cooking ground seeds, were practiced at least 12,000 years before their domestication in southwest Asia.
