          Abstract

          Rhizopus stolonifer es un hongo fitopatógeno versátil que puede crecer y desarrollarse en una amplia gama de temperaturas y humedades relativas. Su rápida velocidad de crecimiento le permite colonizar la superficie de los productos agrícolas y causar la enfermedad conocida como pudrición blanda que ocasiona importantes pérdidas económicas. Este proceso se desarrolla mediante la excreción de enzimas pécticas del hongo que degradan y disuelven las pectinas de la lámina media de las células vegetales. Durante varios años se han empleado fungicidas sintéticos para controlar a este microorganismo; sin embargo, en diversos estudios se ha demostrado que estos compuestos han causado resistencia en las cepas y además representan un riesgo potencial para la seguridad del medio ambiente y la salud humana. En la búsqueda de alternativas naturales para el control de las pudriciones postcosecha, se han valorado opciones como el empleo de extractos vegetales, antagonismo microbiano y quitosano. En esos estudios, los autores han señalado la necesidad de profundizar en el conocimiento de sus componentes activos (extractos vegetales), sus mecanismos de acción (microorganismos antagonistas) y su potencial antimicrobiano (quitosano). Las investigaciones que se realicen al respecto contribuirán a potenciar el empleo de mejores estrategias de control de forma individual o combinada.

          Translated abstract

          Rhizopus stolonifer is a versatile phytopathogen fungus which can grow and develop in a wide range of temperature and relative humidity. Its fast growth rate allows it to colonize the surface of agricultural products, causing a disease known as soft rot, which can cause important economic losses. This process is developed by excretion of fungal peptic enzymes that degrade and dissolve the pectin contained in the middle lamella of plant cells. For several years synthetic fungicides have been used to control this microorganism; however, several studies have shown that these compounds have caused resistance of fungal strains and represent a potential risk for the environment and the human health. In the search of natural alternatives for control of posharvest rots, options such as plant extracts, microbial antagonists and chitosan have been evaluated. In those studies, authors have pointed out the need to deepen the knowledge of the active compounds (plant extracts), action mechanisms (antagonist microorganisms), and the antimicrobial potential (chitosan). Future research will contribute to improve the use of better control strategies individually or in combined forms.
