      The role of citizen science in addressing grand challenges in food and agriculture research

          Abstract

          <p class="first" id="d4418036e987">The power of citizen science to contribute to both science and society is gaining increased recognition, particularly in physics and biology. Although there is a long history of public engagement in agriculture and food science, the term ‘citizen science’ has rarely been applied to these efforts. Similarly, in the emerging field of citizen science, most new citizen science projects do not focus on food or agriculture. Here, we convened thought leaders from a broad range of fields related to citizen science, agriculture, and food science to highlight key opportunities for bridging these overlapping yet disconnected communities/fields and identify ways to leverage their respective strengths. Specifically, we show that (i) citizen science projects are addressing many grand challenges facing our food systems, as outlined by the United States National Institute of Food and Agriculture, as well as broader Sustainable Development Goals set by the United Nations Development Programme, (ii) there exist emerging opportunities and unique challenges for citizen science in agriculture/food research, and (iii) the greatest opportunities for the development of citizen science projects in agriculture and food science will be gained by using the existing infrastructure and tools of Extension programmes and through the engagement of urban communities. Further, we argue there is no better time to foster greater collaboration between these fields given the trend of shrinking Extension programmes, the increasing need to apply innovative solutions to address rising demands on agricultural systems, and the exponential growth of the field of citizen science. </p>

          Sourdough and cereal fermentation in a nutritional perspective.

          Use of sourdough is of expanding interest for improvement of flavour, structure and stability of baked goods. Cereal fermentations also show significant potential in improvement and design of the nutritional quality and health effects of foods and ingredients. In addition to improving the sensory quality of whole grain, fibre-rich or gluten-free products, sourdough can also actively retard starch digestibility leading to low glycemic responses, modulate levels and bioaccessibility of bioactive compounds, and improve mineral bioavailability. Cereal fermentation may produce non-digestible polysaccharides, or modify accessibility of the grain fibre complex to gut microbiota. It has also been suggested that degradation of gluten may render bread better suitable for celiac persons. The changes in cereal matrix potentially leading to improved nutritional quality are numerous. They include acid production, suggested to retard starch digestibility, and to adjust pH to a range which favours the action of certain endogenous enzymes, thus changing the bioavailability pattern of minerals and phytochemicals. This is especially beneficial in products rich in bran to deliver minerals and potentially protective compounds in the blood circulation. The action of enzymes during fermentation also causes hydrolysis and solubilisation of grain macromolecules, such as proteins and cell wall polysaccharides. This changes product texture, which may affect nutrient and non-nutrient absorption. New bioactive compounds, such as prebiotic oligosaccharides or other metabolites, may also be formed in cereal fermentations.

            Why farmers adopt best management practice in the United States: a meta-analysis of the adoption literature.

            This meta-analysis of both published and unpublished studies assesses factors believed to influence adoption of agricultural Best Management Practices in the United States. Using an established statistical technique to summarize the adoption literature in the United States, we identified the following variables as having the largest impact on adoption: access to and quality of information, financial capacity, and being connected to agency or local networks of farmers or watershed groups. This study shows that various approaches to data collection affect the results and comparability of adoption studies. In particular, environmental awareness and farmer attitudes have been inconsistently used and measured across the literature. This meta-analysis concludes with suggestions regarding the future direction of adoption studies, along with guidelines for how data should be presented to enhance the adoption of conservation practices and guide research.

              Citizen Science Terminology Matters: Exploring Key Terms

              Author Summary: Much can be at stake depending on the choice of words used to describe citizen science, because terminology impacts how knowledge is developed. Citizen science is a quickly evolving field that is mobilizing people’s involvement in information development, social action and justice, and large-scale information gathering. Currently, a wide variety of terms and expressions are being used to refer to the concept of ‘citizen science’ and its practitioners. Here, we explore these terms to help provide guidance for the future growth of this field. We do this by reviewing the theoretical, historical, geopolitical, and disciplinary context of citizen science terminology; discussing what citizen science is and reviewing related terms; and providing a collection of potential terms and definitions for ‘citizen science’ and people participating in citizen science projects. This collection of terms was generated primarily from the broad knowledge base and on-the-ground experience of the authors, by recognizing the potential issues associated with various terms. While our examples may not be systematic or exhaustive, they are intended to be suggestive and invitational of future consideration. In our collective experience with citizen science projects, no single term is appropriate for all contexts. In a given citizen science project, we suggest that terms should be chosen carefully and their usage explained; direct communication with participants about how terminology affects them and what they would prefer to be called also should occur. We further recommend that a more systematic study of terminology trends in citizen science be conducted.
