          Abstract

          Information on the relative contributions of all dietary sodium (Na) sources is needed to assess the potential efficacy of manipulating the component parts in efforts to implement current recommendations to reduce Na intake in the population. The present study quantified the contributions of inherently food-borne, processing-added, table, cooking, and water sources in 62 adults who were regular users of discretionary salt to allow such an assessment. Seven-day dietary records, potable water collections, and preweighted salt shakers were used to estimate Na intake. Na added during processing contributed 77% of total intake, 11.6% was derived from Na inherent to food, and water was a trivial source. The observed table (6.2%) and cooking (5.1%) values may overestimate the contribution of these sources in the general population due to sample characteristics, yet they were still markedly lower than previously reported values. These findings, coupled with similar observations from other studies, indicate that reduction of discretionary salt will contribute little to moderation of total Na intake in the population.

          Number of days of food intake records required to estimate individual and group nutrient intakes with defined confidence.

          The number of days of food intake data needed to estimate the intake of 29 male (n = 13) and female (n = 16) adult subjects, individually and as a group, was determined for food energy and 18 nutrients. The food intake records were collected in a year-long study conducted by the U.S. Department of Agriculture's Beltsville Human Nutrition Research Center. Each individual's average intake of nutrients and standard deviation over the year were assumed to reflect his or her "usual" intake and day-to-day variability. Confidence intervals (P less than 0.05) for each individual's usual intake were constructed, and from these the number of days of dietary records needed for estimated individual and group intake to be within 10% of usual intake was calculated. The results indicated that the number of days of food intake records needed to predict the usual nutrient intake of an individual varied substantially among individuals for the same nutrient and within individuals for different nutrients; e.g., food energy required the fewest days (averaging 31) and vitamin A the most (averaging 433). This was considerably higher than the number of days needed to estimate mean nutrient intake for this group, which ranged from 3 for food energy to 41 for vitamin A. Fewer days would be needed for larger groups.

            The dominance of salt in manufactured food in the sodium intake of affluent societies.

            Statistical analyses suggest that 25-50% of the salt intake of Western populations is derived from the discretionary use of cooking and table salt. Yet direct estimates of discretionary salt use by a lithium technique show that in one community in Britain this source contributed only 15% to total intake. The estimates of discretionary salt use in Finland, the United States, and Britain have been exaggerated because salt losses in cooking water were not considered. Only about a quarter of cooking salt actually enters the consumed food; allowance for this in statistical calculations makes data on dietary intake similar to those assessed from urinary sodium excretion. Daily salt intake in Britain averages about 10.7 g for adult men and 8.0 g for women, figures similar to those from countries in northern Europe. The natural salt content of food provides about 10% intake, the remaining 75% being derived from salt added by manufacturers; drinking water provides a negligible amount. Any programme for reducing the salt consumption of a population should therefore concentrate primarily on a reduction in the salt used during food processing.
