      Factor analysis – Eating patterns among khat chewers

          A BSTRACT

          Objectives:

          Khat is a green leafy plant that grows in many countries, including in the southwest of Saudi Arabia. It is estimated that one third of the people in Jazan chew khat, and the majority are males. The objective of this study was to identify the dietary patterns among khat-chewing students of Jazan University.

          Methods:

          A cross-sectional descriptive analytical study was conducted at Jazan University. A total of 620 khat-chewing students participated in the study. Food intakes were collected through a food frequency questionnaire (FFQ). Dietary patterns were assessed by exploratory factor analysis based on the intake of the 17 food groups. A principal component analysis for factor extraction followed by varimax rotation was used.

          Results:

          Based on the Kaiser criterion and the scree plot, factor analysis identified three patterns that accounted for 70.2% of the variability within the sample. The first factor (starch) was characterized by rice, bread, pizza, potato, traditional food, burger, snacks, and hot drinks. The second factor (meat products/fruit) included meat products, poultry, fish, cool drinks, and fruit. The third factor (dairy products/vegetables) included dairy, low-fat and fat-free dairy, fat, and vegetables.

          Conclusion:

          The present study identified dietary patterns among khat-chewing students via factor analysis. It is now important to identify a correlation between specific patterns and health status to implement dietary interventions.

          The Healthy Eating Index: design and applications.

          To develop an index of overall diet quality. The Healthy Eating Index (HEI) was developed based on a 10-component system of five food groups, four nutrients, and a measure of variety in food intake. Each of the 10 components has a score ranging from 0 to 10, so the total possible index score is 100. Data from the 1989 and 1990 Continuing Survey of Food Intake by Individuals were used to analyze the HEI for a representative sample of the US population. Frequencies, correlation coefficients, means. The mean HEI was 63.9; most people scored neither very high nor very low. No one component of the index dominated the HEI score. People were most likely to do poorly in the fruit, saturated fat, grains, vegetable, and total fat categories. The HEI correlated positively and significantly with most nutrients; as the total HEI increased, intake for a range of nutrients also increased. The HEI is a useful index of overall diet quality of the consumer. The US Department of Agriculture will use the HEI to monitor changes in dietary intake over time and as the basis of nutrition promotion activities for the population.

              Reproducibility and validity of dietary patterns assessed with a food-frequency questionnaire.

              Recently, the analysis of dietary patterns has emerged as a possible approach to examining diet-disease relations. We examined the reproducibility and validity of dietary patterns defined by factor analysis using dietary data collected with a food-frequency questionnaire (FFQ). We enrolled a subsample of men (n = 127) from the Health Professionals Follow-up Study in a diet-validation study in 1986. A 131-item FFQ was administered twice, 1 y apart, and two 1-wk diet records and blood samples were collected during this 1-y interval. Using factor analysis, we identified 2 major eating patterns, which were qualitatively similar across the 2 FFQs and the diet records. The first factor, the prudent dietary pattern, was characterized by a high intake of vegetables, fruit, legumes, whole grains, and fish and other seafood, whereas the second factor, the Western pattern, was characterized by a high intake of processed meat, red meat, butter, high-fat dairy products, eggs, and refined grains. The reliability correlations for the factor scores between the 2 FFQs were 0.70 for the prudent pattern and 0.67 for the Western pattern. The correlations (corrected for week-to-week variation in diet records) between the 2 FFQs and diet records ranged from 0.45 to 0.74 for the 2 patterns. In addition, the correlations between the factor scores and nutrient intakes and plasma concentrations of biomarkers were in the expected direction. These data indicate reasonable reproducibility and validity of the major dietary patterns defined by factor analysis with data from an FFQ.
