          Abstract

          O objetivo deste trabalho foi avaliar o desempenho de bezerros mestiços, aleitados com soro de queijo em associação ao colostro. Foram utilizados 24 bezerros Holandês x Zebu, distribuídos em delineamento inteiramente casualizado, com três tratamentos e oito repetições. Os tratamentos consistiram de: leite integral, 50% de leite integral + 50% de soro de queijo, e 30% de colostro + 70% de soro de queijo. O desenvolvimento dos bezerros foi avaliado até os 60 dias de idade, por meio de pesagens semanais e mensurações corporais. Para a estimativa de consumo, foram feitas medições diárias de consumo da dieta sólida, pelo método oferta/sobra. O desempenho econômico foi avaliado pelo cálculo de indicadores de custos e receitas, e de medidas de resultados econômicos. Não houve influência da dieta líquida sobre o consumo de matéria seca e sobre as médias de medidas corporais dos bezerros. Foram observadas diferenças significativas no ganho de peso dos animais na segunda e na quarta semanas de vida. A dieta com colostro apresentou o maior lucro adicional em comparação ao tratamento controle. A associação do soro de queijo ao colostro é a opção mais vantajosa economicamente, já que a substituição de 100% do leite por esses subprodutos não prejudicou o desempenho dos animais.

          Translated abstract

          The objective of this work was to evaluate the performance of crossbred calves fed cheese whey, in association with colostrum. Twenty‑four Holstein x Zebu calves, distributed in a completely randomized block design, with three treatments and eight replicates, were used. The treatments consisted of: whole milk; 50% whole milk + 50% cheese whey; and 30% colostrum + 70% cheese whey. The development of calves was evaluated until 60 days of age by weekly weighing and body measurements. To estimate consumption, daily measurements of solid diet consumption were done by the supply/spare method. Economic performance was evaluated by calculating indicators of costs and revenues, and measurements of economic outcomes. There was no influence of liquid diet on dry matter intake and on average body measurements of calves. Significant differences were found in animal weight gain in the second and in the fourth weeks of life. The diet containing colostrum showed the highest additional profit when compared to the control treatment. The association of cheese whey and colostrum is the most economically advantageous option in the liquid diet of crossbred calves, since the substitution of 100% of the milk by these byproducts did not harm the performance of animals.

            Evaluation of the effects of oral colostrum supplementation during the first fourteen days on the health and performance of preweaned calves

            Increasing concerns about antimicrobial resistance have led to the development and implementation of alternatives to antimicrobial use in animal production. The objective of this clinical trial was to determine the effect of colostrum supplementation of the milk replacer ration on morbidity, mortality, feed intake, and weight gain of preweaned calves. Ninety 1-d-old calves on each of 3 commercial calf ranches were randomly allocated to 1 of 3 groups. Treatment-group calves received 10 g of supplemental immunoglobulin G (IgG) in the form of 70 g of colostrum powder in the milk replacer twice daily for 14 d. The placebo-group calves received a nutritionally equivalent supplement lacking IgG in the milk replacer twice daily for 14 d. Control calves received milk replacer without supplements twice daily. Calves were housed in individual hutches and were weighed on d 1, 28, and 60. Serum was collected on d 2 for serum IgG determination. Daily health evaluations for the first 28 d of life were performed by study personnel blinded to treatment group assignment. Observed illness was treated based on health assessment, rectal temperature, and specific calf ranch protocols. Feed consumption (milk and grain) was recorded. Calves receiving supplemental colostrum had less diarrhea and received fewer antimicrobial treatments than control and placebo calves. The results indicated that calf diarrhea was associated with low serum IgG levels and low-weight calves. Grain consumption and weight gain over the first 28 d of life were significantly greater in colostrum-supplemented calves compared with control calves. No differences in mortality or respiratory disease incidence among groups were detected. Supplemental colostrum during the first 2 wk of life can reduce diarrheal disease in preweaned calves on calf ranches and thereby reduce the amount of antimicrobial treatments needed.

              Propriedades fisiológicas-funcionais das proteínas do soro de leite

              O presente artigo coloca em destaque as propriedades multifuncionais das proteínas presentes no soro de leite bovino, a começar pelo colostro que contém essas proteínas em concentrações muito elevadas e que tem por função garantir a proteção e a imunidade dos recém-nascidos. Essas mesmas proteínas continuam no leite, porém em concentrações bastante reduzidas. A utilização dessas proteínas nas formas de concentrados e isolados protéicos evidenciam propriedades muito favoráveis à saúde no sentido de diminuir o risco de doenças infecciosas e também as consideradas crônicas e/ou degenerativas. Enfatizou-se as propriedades das proteínas do soro de leite e de peptídios delas resultantes no estímulo ao sistema imunológico, na proteção contra microrganismos patogênicos e contra alguns tipos de vírus como o HIV e o vírus da hepatite C, na proteção contra vários tipos de câncer, particularmente de cólon, na proteção da mucosa gástrica contra agressão por agentes ulcerogênicos, evidenciou-se várias linhas de ação protetora das proteínas de soro contra agentes condicionadores de problemas cardiovasculares. Com base em várias propriedades funcionais das proteínas do soro de leite, discutiu-se a vantagem e os benefícios de seu uso como suplemento alimentar para atletas e esportistas em geral. Os possíveis benefícios de vários fatores de crescimento celular, presentes no soro de leite também foram discutidos.
