      Pathogen detection and source-tracking of a Salmonella enteritidis food poisoning incident

          Abstract

          Objective Through laboratory testing and analysis, to find out the cause of a food poisoning event, and we provide reference for the prevention similar food poisoning event in future.

          Methods The samples including anal swabs or feces of the patients and food samples collected from same cake stores were tested by PCR and bacterial culture for foodborne pathogens detection. Isolates from the samples were analyzed by biochemical-identification, serumtyping, drug susceptibility test and pulse field gel electrophoresis (PFGE). The homology between different strains was analyzed.

          Results Fifty-nine of the 61 samples were positive for Salmonella in real-time PCR, and 59 Salmonella strains were isolated from these samples. All the isolates were Salmonella enteritidis, and they had almost the same drug susceptibility. The PFGE results showed that the Salmonella enteritidis isolates had the same PFGE fingerprint, which indicated that they were derived from the same strain.

          Conclusion This food poisoning event was caused by food contamination with a Salmonella enteritis strain. The food poisoning caused by Salmonella enteritis was successfully traced through PFGE genotyping technique.

          摘要: 目的 通过实验室检测分析, 查明某起食物中毒事件的原因, 为今后防控细菌性食物中毒提供参考。 方法 针对各县区送检的病人肛拭子或粪便、市场监督管理局送检的食品样本进行食源性致病菌PCR检测、分离培养、生化鉴定、血清学分型、药敏实验、脉冲场凝胶电泳 (PFGE), 分析不同菌株之间的同源性。 结果 61份临床及食品样本经荧光定量PCR检测, 59份为沙门菌阳性, 并分离鉴定到59株沙门菌, 经血清分型确认均为肠炎血清型, 59株肠炎沙门菌的药敏结果大致相同, PFGE带型完全一致。 结论 本次食物中毒事件是由于患者食用了经相同肠炎沙门菌污染的食物引起的, 通过PFGE基因分型技术, 对本次肠炎沙门菌引起食物中毒事件成功溯源。
